Remember! You don’t need a special recipe… you can use stone-milled flours in any recipe. If you find the outcome a bit dry, don't be afraid to increase the liquid in your recipe. Our flours are thirsty!
I bought this flour as a substitute for Yecora Rojo for my sourdough breads. It has a wonderful aroma and flavor. My resulting loaves have been incredible and, in my opinion, better than Yecora Rojo and it does not have the cinnamon aroma and taste. (For me, the cinnamon aroma and flavor is not pleasant.) This flour gave a very nice crumb and crust and a great oven spring. I think this will become my new favorite. I highly recommend Stardust flour!

Incredible flour
I’ve finally found my favorite flour for 100% whole wheat sourdough! For me this even beats yecora rojo, which I also love. It has the best flavor and I get a more open crumb for some reason. I made a loaf with 100% Stardust whole wheat, and another with half Stardust, half spelt. Both at a hydration of about 87% and the results were amazing. Great in a loaf pan as you suggest, but I think at a slightly lower hydration it could be fine as a free-standing loaf too.

Stardust is a great bread flour
I’ve used Stardust 00 in sourdough, and it yielded a great loaf of bread. It handled extremely well, great oven spring, and had terrific flavor. I just wish the shipping weren’t so expensive and that BSM had other sifts than 00 or whole.
Using Butlers Gold has taken my pizza dough and sour dough to the next level! Holy Cow! The flavor is amazing, wonderful texture, so easy to work with.
